The concept for James Two Brothers distillery was established June 18, 2012 as a micro distillery for small boutique-style production of beverage grade spirit alcohol. Operations are currently waiting licensing with both Federal and Local municipalities.
Upon approval, we plan to perfect our yeast strains and processing methods by producing very small batches, adequate for comparison tests and sampling to create our own distinct branding.
We choose Ocala for numerous reasons, not the least of which is the abundance of pure natural spring water abundant in the area. Arguably cleaner than mountain fed streams, the subterranean water here is naturally filtered and pure. There is also an unpretentious presence of small scale natural grain and cane farming, which assures we know what we are buying, and who we buy it from. We hope this will encourage and support local growers who, like us, care about how they work, and why.
